Oaxaca, the fourth largest coffee-producing state in Mexico, is responsible for 10% of national production. The area stands out through its traditional varieties, typica and bourbon, known for their delicate profile. Most coffee plantations in Oaxaca cover areas between 0.5 - 2 ha, their productivity being very low: 1-3 bags/ha.
